190mm San-Mai chef's knife

A chefs knife forged from a billet of san mai steel consisting of stainless steel cladding and a core steel of Japanese Super Blue steel for the edge. It has a lovely profile similar to a German chefs knife that is perfect for cooks who like to rock chop with their knives. A 51mm heel height makes chopping veggies and meat easy. It has a pronounced distal taper with the blade getting thinner towards the tip.

 

The handle is quilted maple with a ferrule of walnut, and is finished in a Japanese style 'D' shape that's comfortable in the hand.
