230mm San-Mai chef's knife
A chef's knife forged from a billet of san mai steel consisting of wrought iron cladding and a core steel of Japanese White #2. It has a lovely profile similar to a French chef's knife or the Japanese smith Masamoto. A 52mm heel height makes chopping veggies and meat easy. It has a pronounced distal taper with the blade thinning significantly along its length all the way to a very fine tip.
The main part of the handle is birch, with a ferrule of bubinga, and is finished in a Japanese style 'D' shape that's comfortable in the hand.
